Baking cakes was never my hobby.
It all began after the birth of my daughter, when I was at home looking for a way to support my family.
I started teaching myself — through books, videos, and countless experiments in my kitchen.
Somewhere along the way, I discovered something unexpected: creating desserts brought me real joy.
I fell in love with the process.
With the texture of cream.
With the aroma of fresh baking.
With the moment when simple ingredients turn into something special.
Every new recipe is a challenge I simply cannot resist.
When the war began in Ukraine, my family moved to Canada — to Gatineau, Quebec.
It was there that I met people who became more than colleagues — they became part of my journey.
A special place in my professional path belongs to the chef of Roberto Pizza Romana — an incredibly talented master of his craft.
Roberto patiently taught me how to work with dough, how not to fear mistakes, and how to understand that when something doesn’t work out, it’s not failure
— it’s the next step forward.
Because of him, I learned what true maritozzi and tiramisu should taste like, how crisp cannoli should be, and how deeply flavourful lasagna should feel.
I am endlessly grateful to him for his trust, patience, and professionalism.
I am also grateful to his wife, Geneviève — a warm-hearted, radiant person who became my friend and support.
She is the light that fills the restaurant with warmth for everyone who walks through its doors.
Today, Madam Cake is a blend of Ukrainian traditions, European technique, and my personal journey — with a gentle Italian touch in the texture of the dough,
the balance of flavour, and the love of craftsmanship.
This is more than dessert.
It is a story of growth, courage, and love for what I do.
